To do that you need to clarify the lime juice and steep rather than blend the lime peels. It satisfies all of the above requirements, and when tasted side-by-side with Rose’s it still captures the intent of Rose’s while improving greatly upon it.

Weigh out your sugar. In the case of lime cordial, you need a boost from citric acid.

Citric acid is completely natural and available just about anywhere.

You can also pick it up at most any homebrew shop.

  • Warm the water and place in blender.

  • Add lime zest, sugar, citric acid and 3.5 oz of lime juice to blender.

  • Blend for about 30 seconds.

  • Fine strain into bottle and refrigerate.

    Freeze it in ice cube trays for easy, single-serve portions.

    This lime cordial recipe will put Rose’s Sweetened Lime Juice to shame when it comes time to mix a Gimlet cocktail.

    Use peeler or microplane to remove the zest of about 4 limes. If you don’t have a scale it’s about 8 oz/240 ml. You can let it sit for days and days to infuse that lime peel into the syrup, or you can throw it in a blender on medium speed for about 30 seconds. Again, it gives a Gimlet (or a Kamikaze, if you’re into that sort of thing – I know I am) a bracing, bitter, tart edge.

    Rum, mint, sparkling water, lime juice, and sugar all go together to make a great mojito, but swap the sugar and lime juice for lime cordial, making for a sweet but slightly spicy cocktail. Letting something sit in a Mason jar for six weeks won’t work for us. While it’s a really nice idea, fresh lime juice and sugar in no way captures the tartness and bitterness of a proper lime cordial.

    We find his version a bit too sweet, so we adjust the proportions.

    This lime cordial recipe is delicious, but it does not produce a transparent product. This allows you to gently adjust the sweetness without overpowering the lime.

  • Cloudy Appearance: If your cordial appears cloudy, this is usually due to the zest particles or pulp from the lime juice.

    Enjoy it over ice with soda or in your favorite cocktail.
